Oatmeal Muffins

Quick and easy oatmeal whole wheat muffin recipe.

Ingredients
  

  • 1 cup oatmeal
  • 1 cup buttermilk
  • 1 egg
  • 1/2 cup brown sugar
  • 1 cup whole wheat flour
  • 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/4 cup vegetable oil

Instructions
 

  • Preheat oven to 400 degrees.
  • Grease muffin tin, or use cupcake liners.
  • Add oats to a large bowl.
  • Pour buttermilk over oats.
    Let it stand for 5 minutes.
  • Add egg and brown sugar.
  • Mix batter well.
  • Stir in flour, baking soda, and baking powder.
  • Mix again.
  • Pour in oil.
  • Mix one last time.
  • Spoon batter into muffin tins filling them 2/3 full.
  • Bake for 18 minutes or until golden brown.
