Oatmeal Muffins
Quick and easy oatmeal whole wheat muffin recipe.

- 1 cup oatmeal
- 1 cup buttermilk
- 1 egg
- 1/2 cup brown sugar
- 1 cup whole wheat flour
- 1/2 tsp baking soda
- 1 1/2 tsp baking powder
- 1/4 cup vegetable oil
Preheat oven to 400 degrees.
Grease muffin tin, or use cupcake liners.
Add oats to a large bowl.
Pour buttermilk over oats. Let it stand for 5 minutes. Add egg and brown sugar.
Mix batter well.
Stir in flour, baking soda, and baking powder.
Mix again.
Pour in oil.
Mix one last time.
Spoon batter into muffin tins filling them 2/3 full.
Bake for 18 minutes or until golden brown.
