Light and Fluffy Pancake Recipe

Ingredients
  

  • 2 cups flour
  • 2 Tbsp. sugar
  • 1/2 tsp. salt
  • 4 tsp baking powder
  • 2/3 cup oil
  • 2 eggs
  • 1 1/2 cup buttermilk

Instructions
 

  • In a large bowl stir all of the dry ingredients together. 
    In a separate bowl mix the oil, eggs and milk.
  • Add wet ingredients to dry ingredients and stir just until mixed. (do not over mix)
  • Pour 1/4 cup batter on hot griddle. 
    Bake until bubbles appear.  Turn.  Bake the other side until golden brown.
